Vegetarian Chalupa
Ingredients
¼ cup cooked black beans
½ cup cooked refried beans
¼ cup green bell peppers
1 tsp oil
1 tbsp taco seasoning
1 cup finely chopped tomatoes
1 cup finely chopped red onions
½ cup finely chopped cilantro
½ tsp salt (or per taste)
1 tsp cumin powder
1 tsp red chili powder
1 tsp lime juice
½ cup finely chopped lettuce
Mexican blend cheese
4 kawan parathas
Preparation
In a skillet add oil and saute bell peppers once they are soft add taco mix and mix well. Add black beans and refried beans with potato masher, mash the beans and let it cook.
In a big bowl add onions, tomatoes, cilantro, cumin, red chili powder, salt and lime juice. Mix all together and your pico de gallo is ready.
In a round flat heated skillet, place the Kawan paratha and cook according to the instructions. Fold the cooked paratha and cook it in the pre heated air fryer at 360F for 8 minutes. Flip the sides in the air fryer halfway through.
Open the air-fried Paratha, in the center add the refried beans, pico de gallo, lettuce, and cheese.
Tips
Additional toppings you can add to the Chalupa are guacamole, cilantro, green onions and taco bell sauce.
Ensure your Kawan Paratha does not get over cooked when cooking on the skillet.
